Specialty Grade Coffee

Why This Low Acid Coffee Won’t Upset Your Stomach

Why Toomer’s Coffee Is the Right Coffee for You

toomers coffee roaster family owned specialty coffee custom roasted to order
Small batch and infrared roasted from hand-picked farms all around the world…just for you!
If you love coffee but your stomach doesn’t always love you back, Toomer’s Coffee Roasters was built with you in mind. If you’re also tired of buying from faceless corporations and would rather support a real family, that’s who you’ll find on the other end of every bag.

Sandy & Trish Toomer – Owners of Toomer’s Coffee Roasters since 2004

We’re a family-owned specialty coffee company based in Opelika, Alabama, started in 2004 by Sandy and Trish Toomer after nearly a decade of missionary work in Central and South America. What began as a small retail pop-up has grown into a roastery processing around 50,000 lbs. of green coffee a year — but the “family” part hasn’t changed. This is still Sandy, Trish, and the family they’ve built around them, roasting coffee they’d hand to you themselves, one batch at a time, in the same Alabama roastery they’ve called home for two decades.

The Acidity Problem — And Why Infrared Roasting Solves It

Here’s something most coffee drinkers don’t think about until it becomes a problem: coffee’s acidity is largely a byproduct of *how* it’s roasted, not just the bean itself. Traditional roasters use direct flame and drum contact, which heats beans unevenly and drives up the compounds responsible for that sharp, sour edge — the same edge that leaves your stomach unsettled after your second cup.
We roast differently. Every single coffee we sell — all of it, no exceptions — is infrared roasted. Infrared roasting heats beans more gently and more evenly than a conventional flame roaster, penetrating the bean itself rather than just scorching the surface. That even heat transfer means fewer of the harsh acidic compounds develop during roasting, which translates directly into a smoother, rounder cup with meaningfully lower acidity than what you’d get from a typical bag off the shelf.
This isn’t a gimmick or a single “specialty” line tucked into our catalog. It’s how we roast everything, full stop. And because we’re never sacrificing the specialty-grade quality of the bean to get there, you’re not trading flavor for comfort. You’re getting both.
We hear it constantly from customers who’d all but given up on coffee: people who cut back or quit entirely because of stomach sensitivity, acid reflux, or just general discomfort, and who’ve come back to their morning cup because our roast doesn’t fight them the way others do. That’s the entire point of what we do — coffee that loves you back.
## Nearly 30 Coffees, Every One Roasted the Same Careful Way
Low acidity doesn’t mean limited choice. Our lineup includes nearly 30 specialty-grade coffees — single-origin selections, rotating micro-lots, flavored coffees, and water-processed decaf — and every last one goes through the same infrared roasting process. Whether you’re in the mood for something bold and dark, bright and fruity, or a smooth flavored blend for the afternoon, you’re never choosing between “the low acid option” and “the good option.” With us, they’re the same thing, every time, across the entire lineup.
That range matters because coffee lovers aren’t all chasing the same cup. Some want a rich, heavy roast to start the day; others want something lighter and more nuanced for an afternoon pour-over. Having nearly 30 options means you can actually explore — try a new origin every month, build a rotation, or find the one that becomes your everyday coffee — without ever stepping outside the low-acid, stomach-friendly roasting process that got you here in the first place.
## Fresh to Your Door, Every Time
Great roasting doesn’t mean much if the coffee sits in a warehouse for weeks before it reaches you. We roast in small batches and ship quickly, so what lands on your doorstep is close to what just came out of the roaster — not something that’s been sitting on a shelf losing flavor and freshness. Our nationwide coffee subscription takes that a step further: you pick the specific coffees you want, not a mystery box someone else assembled for you, and we keep them coming on your schedule. It’s the easiest way to make sure you never run out of the roast that actually works for you.
That freshness matters just as much as the roasting method itself. Even the gentlest infrared roast can’t make up for beans that have gone stale in transit or storage. We control that end of the process too, so the smoothness and low acidity you taste in your first bag is still there in your fiftieth.

A Family Business, Rooted in Faith

Sandy & Trish with their (now adult) children just before launching off into the Amazon Rainforest (1995)

Toomer’s isn’t just a coffee company that happens to be Christian-owned — faith is why we exist. Sandy and Trish spent years flying aid and the gospel into remote villages in the Amazon with Mission Aviation Fellowship before coming home to build something that could keep serving that same calling, just in a different form. A significant portion of every sale goes back into mission work — church planting, evangelism, and ministry partnerships around the world. When you buy a bag of Toomer’s, you’re not just restocking your pantry; you’re investing in work that reaches far beyond your kitchen counter.

That conviction shapes how we run the business day to day, too: with integrity, transparency, and a genuine commitment to the people who walk through our doors or place an order online. You’re not a transaction to us. You’re a customer we’ve prayed would find us, and we’re grateful every time you do.
## Your Next Cup
Whether you’re chasing smoother mornings without the stomach trouble, looking to support a real family business instead of a conglomerate, or simply want coffee roasted with more care than the industry standard, Toomer’s Coffee has a bag with your name on it. Explore our nearly 30 infrared-roasted, low-acid specialty coffees and taste what two decades of family, faith, and craft actually taste like — cup after cup, without the acid holding you back.

toomers_coffee_roasters_costa_rica_flagOur Costa Rican Tarrazu coffee is renowned for several characteristics that make it special and highly regarded among coffee enthusiasts:

  1. Ideal Growing Conditions: Tarrazu is a coffee-growing region in Costa Rica known for its high-altitude coffee farms. The combination of high elevations, rich volcanic soil, and a favorable climate provides optimal conditions for coffee cultivation. The altitude allows coffee cherries to mature slowly, enhancing their flavor.
  2. Bright Acidity: Costa Rican Tarrazu coffee is known for its bright and lively acidity. This acidity is often described as citrusy and vibrant, adding a refreshing quality to the coffee.
  3. Clean and Balanced Flavor: Tarrazu coffee is celebrated for its clean and well-balanced flavor profile. It typically exhibits a harmonious blend of flavors, including mild fruitiness, floral notes, and hints of cocoa or nuttiness.
  4. Medium Body: It typically has a medium body, which means it's not overly heavy but still offers a satisfying mouthfeel.
  5. Strict Quality Control: Costa Rica has strict regulations and quality control measures in place for its coffee production. Coffee from Tarrazu is often subject to these rigorous standards, ensuring consistent quality.
  6. Sustainable Practices: Many Tarrazu coffee farms prioritize sustainable and environmentally friendly farming practices, making it appealing to eco-conscious consumers.
  7. Single-Origin Excellence: Tarrazu coffee is often sold as single-origin, allowing coffee enthusiasts to appreciate the unique terroir and characteristics of this specific region.
  8. Traceability: Tarrazu coffee often comes with traceability, meaning you can learn about the specific farm and processing methods used for the beans, adding to the coffee's story and authenticity.

These factors, combined with Costa Rica's commitment to coffee quality and sustainability, contribute to the special reputation of Tarrazu coffee. It's considered a premium coffee choice and is sought after by those who appreciate a well-balanced, flavorful cup of coffee with bright acidity.
